This year’s hot new Valentine’s day gift item, according to the ladies on The View, is a bouquet of rainbow roses – made by splitting the stems of white roses and soaking each piece in dyed water. The Rainbow Rose Company is sure to be swamped with orders this weekend, but if you opt for gifts of the edible variety, try making rainbow jellies – a hit with the kids, and a fun project for them too. They make a great, gluten-free treat to bring to class parties – who doesn’t love sweets that jiggle?
These really are easier than they sound – once you get the hang of it, you can make layered gelatin for all sorts of special occasions, each with custom colored stripes. The opaque layers are made with yogurt – use plain, unsweetened, or your squares will be overly sweet. Each layer sets quickly, being so thin – but make sure you wait until it’s firm before adding the next.

Rainbow Jellies
small packages of Jell-O, any colors
plain yogurt
Mix one package of Jell-O with 1 cup boiling water, stirring to dissolve completely. Pour 2/3 cup into an 8″x8″ pan that has been rubbed lightly with vegetable oil. Refrigerate until set. Stir enough yogurt into the remaining Jell-O to make 2/3 cup, and pour it over the chilled first layer.
Continue in the same manner to make clear and opaque layers and chilling each before adding the next. Once finished, cover and chill for a few hours, then cut into squares with a sharp knife.
